Happy New Year from our home to yours. We have not made any post to our site for a while. The wife was in the hospital a few towns away for two weeks over Christmas. She is home recovering now so we are all home now.
Royal Potato Salad
Grandma always made me the foods I liked. Royal potatoes salad came up as one item she would make for me. We leave the skin on the potatoes and if you are like me and overcook the potatoes even a little the skin on the top of the potatoes will lift of the potatoes and look like a hat or to a young child’s imagination a crown. So grandma called it Royal Potato Salad. Later in years when she left us, we were asked to bring the Royal Potato Salad to many events we went to. This salad became popular among my family and parents friends.
1 Celery Stalk
1/2 cup Chopped Onion
3/4 cup Mayonnaise (if not enough you can add more for your liking)
Paprika just enough to cover the top
Wash and clean your potatoes, be sure to remove all bad spots if there is any and any visible bruises. Bring a large pot of water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, and chop. Leave the skins on the potatoes. When cool enough chopped up the potatoes and put in a bowl.
While water is boiling for potatoes you can start on the eggs. Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat and let eggs stand in hot water for 25minutes. Remove from hot water, cool, peel and keep 2 eggs for the tops of the salad and the rest are to be chopped inside the salad.
When potatoes are chopped go ahead and chop up your eggs that are going inside your salad and add to potatoes wash and clean your celery stalk and chopped finely and add to salad chopped up onion and add to salad. Add the Mayonnaise and mix well be sure to mix the bottom of the bowl as well bring the bottom to the top but do not over mix. Slice in half the 2 eggs you have set aside for the top and place anywhere you want on top. Lightly dust paprika over the top of the salad. Refrigerate until chilled.
