When I think of Christmas I think of food.  There are many I love but my favorite is peppermint brownies. I love making these brownies all year round.  When I make my peppermint brownies I like to use the peppermint and mint extract and it helps to make the room smell like peppermint when the lid is open on the bottle.  It is a powerful aroma and I just love the smell and I love the taste of peppermint brownies I think it can make any time of the year not just Christmas time. You can find my recipe below hope you enjoy it.
Peppermint  Brownies
1 cups white sugar                                                 1 teaspoon baking soda
6 Tablespoons  margarine                                                  1 vanilla
2 eggs                                                                          2 cups all-purpose flour
2 tablespoons unsweetened cocoa powder    2 tablespoons white sugar
1 teaspoon salt                                               2 cups applesauce
1 small drop of pure(peppermint & mint extract for the peppermint flavor)
Directions
Preheat oven to 325 degrees F (175 degrees C). Grease an 8-inch square pan.  and line with parchment paper; allow 2 inches of overhang on the long sides.
Cream white sugar and margarine. Add eggs. Sift cocoa, salt, baking soda,  and flour ingredients and add to sugar mixture, alternately with applesauce. Add a small drop of peppermint and mint extract, just to flavor it is very strong so you do not need very much at all not even half a drop gives most people enough peppermint flavor.  If you find it was too weak the first time you make it add a tiny more the second time.   When mixing be sure flour is mixed in with all ingredients and not settled on the bottom of the bowl.  Be sure all ingredients are mixed well until glossy and thick. Then you may choose your baking method depending on the peppermint type you are using.
If using the pure peppermint and mint extract in your mix:   Bake for 25 to 30 minutes.
If using the crushed candy canes on top of peppermint brownies :
If you want to use crushed candy canes on top crush two candy canes between wax paper and set aside.
Bake the peppermint brownies in the center of the oven for 25 to 30  minutes. Test your peppermint brownies and see if baked.  You will know it is done when you insert a toothpick in the center and it comes out with a few moist crumbs. Let the brownies cool in the pan.
Icing :
3  Tablespoons soft butter
3   Tablespoons cocoa
1 teaspoon honey
1 teaspoon vanilla
1 cup icing sugar
Beat all together till smooth and spread over your peppermint brownies. If you are putting on crushed candy cane you would put that on top of the icing while it is still soft.
You can cut your peppermint brownies anytime once they are iced they may be messier to cut while the icing is soft but they can still be cut.
